VARIETY: 100% PRIMITIVE - Principal vine of Apulian viticulture

PRODUCTION AREA: Own vineyards, in the Bove Cesine district in the Ginosa countryside

ALTITUDE: 250 m / 300 m above sea level

EXPOSURE: South-facing hilly terrain

TYPE OF SOIL: Calcareous, alluvial

YIELD PER HECTARE: 110 quintals

HARVEST PERIOD: Beginning of September

HARVEST: entirely by hand and in crates

PRODUCTION TECHNIQUE: Red vinification with maceration of the skins for 10/12 days.

Fermentation with inoculations of selected yeasts and at a controlled temperature.

AGING: 4 months in steel and three months in the bottle
